Apple Pie Poptarts

I have had a home-made pop-tarts recipe bookmarked for like, uh, ever.

Then, of course, the super talented Emma of FoodComa did Blueberry ones just the other day and just took it as a cosmic sign that I was meant to make them.

Of course, I had some extra pie dough I made a few weeks ago still in the freezer so I subbed that for the puff pastry. And for something a little “fallish” I just chopped up a couple apples, mixed them with lemon juice, sugar, cinnamon and nutmeg and YUM. Of course, when I went to make icing for them I realized I was out of confectioners sugar (boooo!) oh well, still tasty!
