Simple Trifles

Trifiles are one of those great little desserts that don’t get nearly enough attention. Actually, most people I know had no idea that’s what these are called. They’re great though, simple, light, sweet and easy to change up to fit with whatever is seasonal or handy – that’s a recipe for a great summer dessert in my book.

Ingredients

  • Classic Yellow Butter Cake – Here’s my favorite recipe, but a box mix will do just fine as well
  • Homemade Whipped Cream (I promise it’s easy to make, but you can also sub with cool whip)
  • Strawberries (a quart should be plenty!) cut into bite size chunks
  • Blueberries
  • Sugar (optional)
  • Jars

Instructions

Make the cake in a long sheet tray (you might need two for reglar size trays), let cool and turn out of the trays onto parchment paper. Cake can be made a day or two in advance.

When you’re ready to assemble, combine strawberries and blueberries together with an about a tablespoon of sugar and let macerate for about 10 minutes while you cut out cake. Using cookie cutters (you can also just use mason jar lids if you’re assembling them in a mason jar) cut rounds out of the cake and add to the bottom of your jar, layer with a heaping spoonful of whipped cream and fruit and repeat until your jars are full, ending with fruit.

I made these for a Memorial Day party and everyone said they loved them! I stuck with a red, white a blue theme for these guys but am excited to try different variations in the future:)

    How far ahead can I make these without the cake getting soggy?

      I made the day before and they were good! I probably wouldn’t assemble them much more than 24 hours before you plan to serve, but you can make the cake ahead of time and just keep separate so it’s easy to put together!
